no bake fudge | smartie | banana chip | raisin tollhouse | chow mein
peanut butter chocolate mint | ginger snaps

No Bake Fudge Cookies
  • 2 c. sugar
  • 6 tbsp. cocoa
  • 1/2 c. milk
  • 1/2 c. butter
  • 3 c. rolled oats
  • pinch of salt
  • 1 tsp. vanilla
  • 1 c. coconut
  • 1/4 c. walnuts

Bring first 4 ingredients to a boil in saucepan. Remove from heat and add remaining ingredients. Drop by spoonful onto waxed paper and let stand to set.

Smartie Cookies
  • 1 c. margarine
  • 1/2 c. brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 2 1/2 c. flour
  • 1 1/2 c. Smartie's or M & M's

Blend margarine and sugars; beat in eggs and vanilla. Add dry ingredients and candies. Mix well. Drop by teaspoonfuls onto a greased cookie sheet. Bake at 350F for 10 minutes.

Banana Chip Cookies
  • 1 c. sugar
  • 2/3 c. margarine
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/4 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 6 oz. pkg chocolate chips
  • 1 c. mashed bananas

Mix sugar, margarine, eggs and vanilla. Sift dry ingredients and add to mixture. Blend well. Stir in chips and bananas. Drop by teaspoonfuls onto greased cookie sheets. Bake at 350F for 12 to 15 minutes.

Yield: 5 dozen cookies

Raisin Toll House Cookies
  • 1 c. shortening
  • 3/4 c. brown sugar
  • 3/4 c. white sugar
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1 tsp. hot water
  • 2 1/4 c. sifted flour
  • 1 tsp. salt
  • 1 c. raisins or chocolate chips

Cream shortening. Add sugar and eggs. Dissolve soda in hot water and add to sugar mixture. Mix in flour and salt. Add raisins and drop onto cookie sheet. Bake at 375F for about 9 minutes.

Yield: About 2 dozen

Chow Mein Cookies
  • 1 pkg. butterscotch chips
  • 1/2 c. peanut butter
  • 2 c. chow mein noodles
  • 1 c. marshmallows

Combine butterscotch chips and peanut butter in saucepan over low heat until smooth. Remove from heat and pour over chow mein noodles and marshmallows in a bowl. Mix together until well coated. Spoon out by tablespoons onto waxed paper. Let cool and they're ready to eat.

Peanut Butter Chocolate Mint Cookies
  • 1 c. peanut butter
  • 1 c. butter
  • 2 eggs
  • 1 c. brown sugar
  • 1 c. white sugar
  • 1 tsp. baking soda
  • 3 c. flour
  • 1 c. chocolate mint chips

Mix ingredients well. Roll in balls and flatten with a fork. Bake in moderate oven at 375F for 12 to 15 minutes.

Ginger Snaps
  • 3/4 c. soft shortening
  • 1 c. white sugar
  • 1/4 c. molasses
  • 2 eggs
  • 2 c. flour
  • 1/4 tsp. salt
  • 2 tsp. soda
  • 1 tsp. each cinnamon, cloves, ginger

Cream shortening and sugar together. Add the eggs, one at a time and beat. Add the molasses, then the sifted dry ingredients. Roll dough in hands to the size of a walnut. Press gently onto an ungreased cookie sheet. Bake at 375F for 10-15 minutes.
