pork chop & onion rice bake | taco

Chicken Casserole
  • 1 frying chicken cut-up
  • 1 c. raw rice
  • 1 pkg. onion soup mix
  • 1 can cream of chicken soup
  • 1 can water

Sprinkle rice on the bottom of a 9 x 13" pan. Mix soup and water and pour 1/2 of this mixture over the rice. Sprinkle 1/2 of the package of soup mix over top. Layer the chicken on the rice. Pour the remaining soup mixture over the chicken. Sprinkle the remaining soup mix over the top.

Seal tightly with foil. Bake at 325F for 2 hours. Do not peek!

No-Peek Casserole

This recipe comes from my friend, Chris.

  • 3 lbs of stewing beef
  • 2 cans of cream of mushroom soup
  • 1 can mushrooms drained
  • 3/4 cup of red wine
  • 1 pkg of onion soup mix

Brown meat in a large pot. Add all other ingredients, cover and let cook for 3 hours.

Serve over rice.

Beef Casserole
  • 1 lb. ground beef
  • 1 c. chopped onion
  • 2 c. celery
  • 2 tbsp. brown sugar
  • 4 tbsp soya sauce
  • 1 can mushroom soup
  • 1 can mushrooms (stems & pieces)
  • 1 c. uncooked regular rice
  • 2 1/2 c. boiling water

Brown first 3 ingredients. Add the rest and mix well. Bake for 1 hour at 350F.

Yield" 4 - 6 servings

Tuna Surprise Casserole
  • 1 - 7 oz. can tuna
  • 2 c. macaroni
  • 1 can mushroom soup
  • 1 can milk
  • 1 onion, chopped
  • 1/2 pepper, chopped
  • 3 celery stalks, chopped
  • 2 slices bread, buttered
  • 1/4 lb. Cheddar cheese, grated

Boil macaroni. Chop onion, pepper and celery. Mix macaroni with chopped ingredients. Add tuna, mushroom soup and milk. Sprinkle the cheese over top. Cut bread in cubes and layer on top.

Bake at 350F for one hour.

Casserole Cabbage Rolls
  • 1 lb. hamburger
  • 1 tbsp. cooking oil
  • 1 onion, chopped
  • 1 tsp. salt
  • 1 tsp. pepper
  • 3 tbsp. raw long grain rice
  • 1 can tomato soup
  • 1 soup can of water
  • 3 c. coarsely-shredded cabbage

Brown the hamburger. Add onion, salt, pepper and rice. Mix well. Add soup and water.

Put cabbage into a greased casserole dish. Pour meat mixture over raw cabbage. Do not stir. Bake, covered for about 1 1/2 hours at 350F.

Pork Chop & Onion Rice Bake

This recipe comes from my mom.

  • 6 pork chops
  • 1 can mushrooms with liquid
  • 2 tbsp. diced pimento
  • 1 c. uncooked rice
  • 1 envelope onion soup mix
  • 1 green pepper, chopped
  • 3 c. hot water.
Put all ingredients into a casserole dish, starting with the rice. Bake in a 350F oven for about 1 hour.

Taco Casserole

The kids love this recipe.

  • 1 lb. ground beef
  • 1 c. chopped onion
  • 2 cloves garlic, finely chopped
  • 1 c. water
  • 1/2 c. thick & smooth taco sauce
  • 1 (4 oz) can diced green chilies
  • 1 (2.25 oz.) can sliced ripe olives, drained, divided
  • 1 pkge (12) taco shells, broken, divided
  • 2 c. shredded mild cheddar cheese, divided
  • chopped tomatoes
  • sliced green onion.

Preheat over to 375F.

Cook beef, onion and garlic until beef is browned; drain. Stir in water, taco sauce, chilies, 1/4 c. olives and seasoning mix. Cook over low heat for 3 to 4 minutes.

Layer half of broken shells on bottom of greased 12 x 8" baking dish. Cover with 1/2 of the meat sauce; sprinkle with 1 c. cheese. Repeat with remaining taco shells, meat sauce and cheese. Bake for 20 to 25 minutes until bubbly and cheese is melted. Top with remaining olives, tomatoes and green onions.
